低碳高油 LCHF Day 07 & 08

昨天是我們執行低碳高油飲食滿一星期,除了體重的變化以外,戒掉精緻澱粉最大的感受就是晚餐完不會想睡覺,而且早上起來也不會因為肚子太餓頭暈,不過這樣的飲食也有過渡期,所以這幾天特別口渴,每天都得喝上快兩公升的水。昨天午餐吃了奶油炒蛋、羊奶起司、自製的低醣麵包和芹菜沙拉搭配巴薩米克油醋醬,因為芹菜纖維很多,一小盤吃下來超飽,飯後喝了一杯讓人很幸福的咖啡加杏仁奶,因為天氣有點冷,我坐在窗邊曬太陽喝熱咖啡,心情超好的。晚餐吃了牛肉和豬肉香腸,搭配蒜炒小白菜、水煮蛋、低醣麵包,又是令人滿足的一餐,飯後吃了花生醬餅乾和一小杯草莓優格,太太的姨媽來找她,所以太太決定這幾天補一點小碳。

今天早上起床完全沒有餓的感覺,喝了一杯咖啡之後就出門採買明後天的食材,特地買了奶油南瓜,明天想做奶油南瓜湯來喝喝,補補健康天然的好碳水。午餐又吃了低醣吐司夾羊奶起司,整個太對味!午餐還有清蒸的小白菜、韭蔥,淋上橄欖油加蒜鹽和綜合香草調的醬,最後再加上幾顆綠橄欖。晚餐為了讓先生默默地吃進更多蔬菜,準備了焗烤櫛瓜船和菠菜起司蛋瑪芬,搭配以新鮮胡椒粒調味的牛肉排,吃完完餐還有重頭戲,就是我今天下午利用剩下的花生醬餅乾為餅乾底做的起司蛋糕!很好吃欸~我也吃了三分之一個塔!

希望一週過後我們還是吃得很開心,我也會繼續找食譜、研發低醣甜點和麵包哈哈哈~

Yesterday we hit our one week milestone of our LCHF diet, besides the drop of our weights, one of the biggest benefits, you may say, to get rid of refined carbohydrates is that I don’t feel sleepy after a hearty dinner and when I wake up in the morning, I don’t have dizziness because of hunger. However this diet makes me extra, extra parched every day I basically have to drink up to 2 liters of water per day. Yesterday lunch was buttery scrambled eggs, goat cheese with keto bread and some celery sticks with balsamic vinegar and olive oil. Celery was high in fiber thus super filling. After lunch I had a very soothing coffee with almond milk. Why soothing? Because it was a bit cold in Dublin now and I felt cold after lunch so I drank the hot coffee by the window sill where sunlight warmed me up nicely and that felt very soothing indeed. For dinner we had yet another hearty dish, some beef and pork sausages, garlic fried with baby pak choy, an hard boiled egg and some keto bread. After dinner I had a piece of peanut butter cookie and a small cup of strawberry yogurt as desserts. I am having my period now so I decided to add a tiny bit of carbs to my diet these days.

Today I woke up, not feeling hungry at all. I drank a cup of coffee and left home for some grocery shopping. I bought a butternut squash because it is in the category of good, healthy, natural carbs and I need some now. I’m planning to make butternut squash creamy soup tomorrow. This lunch I had two pieces of keto bread with goat cheese in it and it was just too good! I also had some steamed baby pak choy and garlic chives drizzled with olive oil, garlic salt and dried mix herbs. I also added a few green olives to my lunch dish. For dinner, in order to secretly make my husband eat more vegetable, I prepared a cheesy zucchini boat and egg muffins with spinach and white cheddar cheese filling. Dinner’s protein was beef patties coated in colorful peppercorns. Desserts today were probably the most exciting. This afternoon I crushed the rest of the peanut butter cookies and used them as the base of my cheese cakes. The cheese cakes turned out to be quite delicious I even had one third of the tart. (I molded them in 4 inch tart pans.)

Hopefully a week from now we are still feeling happy and okay with this new WOE, and I will continue to discover and try out more recipes to make desserts and bread! Hehe.
