歷史上的今天|Today in History

今天和先生去肉攤買肉,除了買雞腿肉、五花肉以外,也讓他自己選他想嘗試的肉(他很喜歡隨機選沒吃過的肉品讓我挑戰,他說這叫做:神秘肉挑戰,因為我不會沒煮過的肉哈哈),他選了一盒特貴的肉:愛爾蘭野生鹿肉,我有點怕怕的,擔心鹿肉的野味會很重,但是他說他很想嘗試,所以我們就買了,只能說他這個決定真是太對了,因為今天的晚餐好好吃啊~

簡單地以鹽、黑胡椒、香料和蒜醃漬,熱鍋下去香煎,快起鍋前加一塊奶油增添香氣,起鍋之後把火轉小,加入一點鮮奶油,把剛剛香煎的美味全部融到鮮奶油裡作成醬汁。每一口都好美味~野味沒有我想像中的重,口感跟肉質跟沙朗很像!雖然買兩人份的野鹿肉可以買八隻雞腿肉,但是很值得啊~

Today me and hubby went to the butcher nearby to get some protein, like chicken thighs and pork belly. And he wanted to choose something special he calls this mystery meat challenge, it is when he sometimes chooses a cut we’ve never tried and we’d try it since it’s not something I’d get myself. So this time he chose some Irish wild venison which worried me a bit since wild venison sounded gamey, you know. However he really wanted it so we got it anyways and all I can say is that it was such an amazing decision because dinner today is YUM.

To cook a nice cut of venison, all you need to do is to season the meat simply with salt, pepper, some herbs and garlic. Let it sit aside for a while so the flavor can get into the meat. Heat a pan over medium high heat and put the meat in when the pan is really hot and pan sear the meat to get the nice crust. When it is almost done to your liking, put in a bit of butter to add more fragrance. After the meat is cooked, lower the heat and add some heavy cream into the empty pan to scrape off all those goodies to make a sauce. The venison was so good and each bite was a blessing, not as gamey as I imagined and it tasted just like a real good sirlon, texture and flavor wise. Though the price of the venison for two people is the same for 8 pieces of chicken thigh it was still worth it! YUM!
