我以前是一個起床後不吃點東西,血糖就會低到頭昏想吐的那種人,不過吃低碳到現在將近兩週,我發現我比較不會因為肚子餓而發暈,早上起床喝杯咖啡就很有精神,這一點改變我覺得很好。

昨天早上喝了咖啡配藍莓瑪芬,一次性烤一批馬芬就是有這個優點,幾乎每天都有甜點吃,為了保留晚餐飯後的碳水量,中午就只吃了西洋芹搭配巴薩米克油醋醬,吃完超級飽的。晚餐小火慢烤整隻雞腿,烤了一個半小時還是非常水嫩,這個食譜一定要好好記下來~晚餐也試做了 90 秒麵包,但是我覺得不是很成功,我覺得這個麵包的蛋味有點重,而且孔洞很大,不知道是不是因為我過度攪拌?不過這個麵包不會太鬆散,質地還算紮實,可惜太乾了,本來想拿來當作漢堡的麵包,只好放棄!另外的配菜就是菠菜起司煎蛋,上面再淋上一匙紅醬,色香味俱全,飯後又是一杯咖啡,不過這次吃了杯子蛋糕大小的瑪芬~(因為模具不夠,所以我一共烤了 6 個瑪芬跟 12 個杯子蛋糕的量)

今天早上起來不是很餓,一直到中午了才喝了咖啡喝一個藍莓瑪芬,下午很認真地研究了不同的食譜,想要做出真正的生酮潛艇堡,畢竟昨天的 90 秒麵包我不是很喜歡,找到一個很不錯的食譜,烤出來的質地跟口感跟麵包很像,不過有點不夠澎,後天再來實驗一次,看是不是泡打粉加太多,還是蛋白可以先打發來增加麵包的輕盈度,這個配方還用到了洋車前子粉,不過我的粉是自己磨的,或許不夠細也是原因之一,總之第一次烤這樣的成果我很滿意,潛艇堡搭配了羊茼蒿沙拉和孜然美乃滋特調、香烤五花肉,滋味太棒了!今天也試做了烤櫛瓜片,有些水分還是太多,但烤得剛剛好的那幾片還真的有點像薯片,連不愛吃蔬菜的先生都說好吃!飯後一人一個藍莓瑪芬,結束令人滿足的一餐。

I used to have to have breakfast when I woke up otherwise my blood sugar would drop and I would feel nauseous and dizzy. However almost two weeks into low carb diet, this issue has improved a lot and now I just need a cup of coffee to feel energized in the morning which is a change that amazes me.

Yesterday morning I had a cup of coffee with a blueberry muffin. It is very convenient to bake a batch and have desserts all the time in the fridge. In order not to go over my carbs and save the quota for my dinner dessert, I only had some celery stalks with balsamic vinegar and olive oil at lunch which was very filling still. For dinner I prepared slow roasted chicken legs and roasted them in the oven for an hour and a half. The chicken legs still came out juicy and tender, this recipe is a keeper! Yesterday evening I tried the 90 seconds bread thing and it wasn’t really nice to my taste. It is a bit on the eggy side and the pores in the bread are super big. Perhaps I over mixed it? It is not too crumbly which is good but it is pretty dry so I let go of the hope that it could be used as burger buns. Our side dish was spinach cheesy fried eggs topped with a scoop of red sauce, it smelled good and tasted nice, too! After dinner I had a blueberry muffin in a cupcake’s size, when I was making the muffins I didn’t have enough molds for muffins so I used some cupcake molds as well. 

Waking up this morning not feeling hungry so I only had a cup of coffee with a blueberry muffin around noon. This afternoon I was researching various recipes for bread since the 90 seconds recipe was not a huge success and I really wanted to make a real submarine sandwich. Eventually I found a nice recipe and the bake looked indeed great. The texture is really close to the real bread. However the raise was not enough so I will have to experiment again the day after tomorrow and see if I need to adjust the amount of baking powder or beat the egg whites first. This recipe also uses the psyllium husk powder but I powdered mine myself, perhaps my powder isn’t fine enough? Anyway the first batch came out really good so I couldn’t really complain. I made a submarine sandwich with lambs lettuce, pan-seared pork belly and with my special cumin mayo dressing. It was super tasty! I also tried the zucchini chips today and some of them were still a bit too soggy however the dried ones were really crispy and tasted like some kind of chips, even my husband who basically hates vegetables approved it! Desserts were the same old blueberry muffins but we are still lovin’ it! What a dinner 🙂
