第 21 天

今天早上照常喝了黑咖啡加杏仁奶,早餐吃了巧克力瑪芬,冰過之後味道還不錯,但是我發現除了我先生以外,我好像也不是很喜歡以椰子粉為主要材料的低醣甜點。中午吃了奶油炒韭蔥加上一顆荷包蛋,簡簡單單的味道就很好吃。傍晚烤了生酮漢堡包,煮了蔬菜番茄燉湯,非常好喝、低醣,又很有飽足感,今天的晚餐漢堡很猛,中間的餡料有豬肉排、烤得酥脆的培根、生菜和兩種起司,醬料則是我自己特調的花生醬,先生吃到讚不絕口,但是吃完這一個漢堡我們兩個簡直撐爆了!即使再撐,還是吃得下今天剛出爐的低醣肉桂蘋果塔哈哈哈~酸甜的果肉、酥軟的塔皮和焦糖醬的組合好棒。

 

第 22 天

早起的飲品,不用說你也知道是什麼吧!午餐喝了昨天剩下的蔬菜番茄燉湯和塗了奶油的漢堡包,下午研究炸粉的替代品,一個是炸豬皮,一個是帕瑪森起司,今天就先試試看炸豬皮。把炸豬皮磨成粉後調味,用法就和一般炸粉一樣,炸出來的成果很棒、很酥脆!今天晚餐準備了爆醬雞排,所謂的醬呢,就是雞排中間的馬茲瑞拉起司,作法很簡單,所以下次做的時候我會記得拍照分享食譜,除了炸雞排,我也準備了孜然蛋沙拉和幾片搭配雞排的新鮮羅勒。晚餐過後就是依舊令人滿足的肉桂蘋果塔啦~

Day 21

This morning I had a cup of coffee with almond milk and a chocolate muffin. It tasted quite good after being refrigerated. However I figured, it was not just my husband that isn’t a big fan of the coconut flour in the low-carb baking, I grew to dislike the taste as well. This lunch I had a simple dish, buttery garlic chives with a sunny-side up, which was simple but tasty. In the afternoon I baked some keto buns to go with the burger I was going to make. I also prepare the low-carb tomatoy vegetable soup which was really hearty and filling. The hamburgers today were the winner! For the filling we had pork patties, crispy bacon, lettuce, two kinds of cheese and my homemade peanut butter sauce. My husband loved the burger and we were both knocked out after devouring this bad boy. Knock out or not we’d always have appetite for the cinnamon apple tart hahaha. The sour and sweet apple, soft and crumbly crust and the caramel sauce are a match made in heaven.

 

Day 22

What did I have this morning? I’m sure you know. For lunch I had the rest of the soup from yesterday and the buns smeared with butter. This afternoon I was researching ingredients that could replace flour when making fried chicken. You can use pork rinds or Parmesan cheese so I was going to try pork rinds first. I grounded the pork rinds and seasoned it simply and just used it just like regular flour. It was a success, the crust was really crispy and nice. So dinner we had fried chicken stuffed with mozzarella cheese, it was so good and easy to make. I will make sure to share this recipe with you guys next time. Aside from the fried chicken, I also prepared some cumin egg salad and a few fresh basil leaves that went well with the chicken. After dinner we had the cinnamon apple tarts again which never fail to comfort our souls!
